Fresh, healthy and inexpensive roast chicken salad

When we prepare roast chicken for the whole family, the most common is that there are some pieces that we cannot eat.

Instead of throwing them away, you can make a fresh roast chicken salad with a different flavor.

Recycling is a very important value in the education of children, and it also includes teaching them to take advantage of food and find recipes for children with which not to waste it, such as this simple and healthy salad.

  • 200 gr. roast chicken
  • 1 bag arugula sprouts
  • 2 tomatoes
  • 150 gr. mushroom
  • 50 gr. grated cheese
  • ½ onion
  • Oil
  • Vinegar
  • Salt

advice: You can cut the chicken into strips or dice, depending on how you think your children will eat it better.

1. Wash the arugula, tomatoes and mushrooms well. Cut the tomato into pieces and the onion into slices, and reserve in a bowl

2. In a frying pan, add a drizzle of oil and heat over medium heat. Sauté the mushrooms for a couple of minutes, until they lose their water, and add to the salad.

3. Chop the chicken breast and add it. Add a splash of oil, a little vinegar, salt to taste and sprinkle on the grated cheese.
